Once all the pomegranate seeds have been collected, place them into a large bowl.

Now, you’re ready to move onto the next step in creating your mouthwatering pomegranate raspberry and thyme jam.

Infusing the Thyme Flavor

After carefully preparing the fruit, it’s time to infuse the delightful flavor of thyme into the mixture.

Begin by gathering a handful of fresh thyme sprigs and rinsing them under cool water. Gently pat them dry with a paper towel to remove any excess moisture.

Next, take a small saucepan and add the prepared fruit mixture along with the thyme sprigs. Turn the heat to low and let the jam simmer for about 10 minutes, allowing the thyme to release its aromatic oils and blend with the sweet and tangy flavors of the pomegranate and raspberry. Stir occasionally to ensure even infusion of the thyme flavor.

Once the jam has thickened slightly, remove the thyme sprigs and discard them. Your pomegranate raspberry and thyme jam is now infused with the enchanting taste of thyme, ready to be enjoyed on toast or as a delicious condiment.

Cooking and Jarring the Jam

Once the infusion process is complete, it’s time to cook the jam and prepare it for jarring.

First, remove the thyme sprigs from the mixture and discard them.

Place the pot on the stove over medium heat and bring it to a gentle boil. Stir constantly to prevent the jam from sticking to the bottom of the pot.

As the mixture cooks, it will thicken and become glossy. This should take about 15-20 minutes.

Once the jam has reached the desired consistency, carefully ladle it into sterilized jars, leaving about 1/4 inch of headspace.

Finally, process the jars in a boiling water bath for 10 minutes to ensure they’re properly preserved.
