The Origins of Amatriciana Sauce
You’re delving into the rich history of Amatriciana sauce, which originally hails from the Italian town of Amatrice. You’ll find that it’s a classic culinary delight, with roots in the 17th century.
Initially, it was a simple dish, prepared with just guanciale (pork cheek) and tomato. Peasants created it for sustenance, but it soon became a staple, enjoyed by everyone. Over time, it’s evolved and variations have sprung up, but the sauce’s core elements remain. You’ll always find guanciale, tomato, and a kick of chilli. The addition of Pecorino cheese came later, but it’s now considered a key ingredient.
Today, you can’t imagine a traybake without this flavorful sauce. It’s a testament to the timeless appeal of Amatriciana.
