Picture a humble kitchen, where your great-great-grandmother mixed together a few simple, yet aromatic spices. She was creating a cake that would become a beloved family tradition. It wasn’t just the rich flavors that made it special, but the love and care put into each ingredient. That’s how Mama’s Spice Cake was born.

Over the years, the recipe was passed down through generations. Each addition, each little twist, made it what it’s today. A piece of history, a slice of family tradition and, above all, a testament to Mama’s enduring love.

It’s more than just a cake, it’s a piece of your heritage.

Key Ingredients in Mama’s Spice Cake

You’re probably curious about what goes into Mama’s Spice Cake, aren’t you? Well, it’s no secret recipe, just a handful of simple, hearty ingredients.

You’ll need flour, sugar, and eggs, of course. But it’s the spices that make it special. You’re adding a healthy dose of cinnamon, a pinch of nutmeg, and a dash of cloves. Don’t forget the all-important allspice. That’s Mama’s secret ingredient.

It’s these spices that give the cake its warm, comforting aroma and rich, complex taste. And the final touch? A sprinkle of brown sugar on top for a sweet crunch. It’s a cake that’s as heartwarming to make as it’s to eat.

Now, you’re all set to make your own Mama’s Spice Cake.

The Baking Process: Making Mama’s Spice Cake

Before noon, you’ll mix the dry ingredients, and after letting them sit for a bit, you’ll start on the wet ones for Mama’s Spice Cake.

You’ll add the eggs one at a time, beating them in thoroughly before adding the next.

You’ll then add the molasses, making sure it’s well integrated.

You’ll take that bowl of dry ingredients you mixed earlier and slowly incorporate it into the wet mix. Don’t rush this part. It’s crucial to mix them well, but not overmix.

Next, you’ll pour the batter into your prepared cake tin.

Pop it in the oven and wait. The aroma will fill the kitchen, and you’ll know it’s ready when it’s a beautiful golden brown.

Mama’s Spice Cake, a memory from the past, is now a reality in your kitchen.

Serving and Storing Mama’s Spice Cake

Often, you’ll serve Mama’s Spice Cake warm, but it’s also delicious when stored and eaten at room temperature. You can enjoy the cake’s rich, spicy flavors and moist texture right out of the oven, or you can wait and savor it later.

If you choose to store it for later, let it cool completely. Then, wrap it tightly in plastic wrap or place it in an airtight container. This cake stays fresh at room temperature for up to five days. No need to refrigerate!

You’ll find that the flavors meld and deepen over time, giving you a different but equally delightful experience. So go ahead, eat a slice now, and save some for later. You won’t regret it.

Variations of Mama’s Spice Cake Recipe

Even though you’ve mastered Mama’s original Spice Cake, don’t shy away from experimenting with some variations that could add a unique twist to the beloved classic.

Consider adding a bit of zing with some zesty lemon or orange peel. You could also try a dash of espresso powder to bring out the deep, warm flavors of the spices.

If you’re a chocoholic, why not add a handful of chocolate chips? They’ll melt into the cake, creating pockets of gooey, chocolatey goodness. Alternatively, you might want to try adding some nuts for a crunchy texture. Walnuts or pecans would work great.

  • 2 ¼ cup 11.25 ounces all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon nutmeg
  • ¼ teaspoon all spice
  • ¼ teaspoon cloves
  • ½ cup shortening 3.25 ounces or butter (4 ounces) softened to room temperature, see note
  • 1 ½ cup 11.25 ounces white sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ¼ cup milk
  • Frosting:
  • 4 tablespoons butter
  • ¼ cup brown sugar
  • 1 ½ tablespoons milk
  • ¾ teaspoon vanilla extract
  • 1 ¼ cup 5 ounces powdered sugar

  • Preheat oven to 350 degrees F. Grease a 9×13-inch baking pan with cooking spray or butter and set aside.
  • In a medium sized bowl add flour through a sifter (see note). Then mix together with baking powder, salt, cinnamon, ginger, nutmeg, allspice, and cloves. Set aside.
  • In a large bowl, cream shortening (or softened butter, see note) and white sugar with hand mixer until soft and fluffy. Add eggs and vanilla and mix well.
  • Add ⅓ of the dry ingredients to the batter and mix, scraping down the sides of the bowl as needed. Add ½ of the milk and mix. Add another ⅓ of the dry ingredients and mix. Add the last ½ of the milk and mix until combined. Add the final ⅓ of the dry ingredients and mix until combined, scraping down the sides of the bowl if necessary.
  • Pour cake batter into prepared baking pan and spread evenly. Bake in preheated 350 degree F oven for 35 to 40 minutes or until lightly browned and inserted toothpick comes out clean. Frost cake while warm.

For Frosting:

  • In a small saucepan, melt butter and brown sugar over medium heat. Remove from heat and whisk in milk and vanilla. Add powdered sugar and mix frosting until smooth (see note).
  • Acting quickly, while cake is still warm, pour frosting on cake and spread evenly around edges. Frosting will set as it cools (see note).

My mom always used shortening in this cake, but I have made it with softened butter and it tasty that way as well. The butter gives a slightly richer flavor while the shortening makes it extra light. Both are very good.
2. Sifting the flour is optional, but it does add to the lightness of the cake.
3. If the powdered sugar is really clumpy, sifting it before mixing it in the frosting will help so it doesn’t get clumps.
4. My favorite way to eat this cake is warm, but it definitely looks prettier when it’s cooled because the frosting sets. Either way it’s just yum.
