CINNAMON THYME ROASTED TOMATOES WITH BALSAMIC GLAZE

This recipe takes ordinary tomatoes and transforms them into a mouthwatering dish that will leave you wanting more.

Ingredients

  • Fresh Thyme: A few sprigs of fresh thyme or about 1-2 teaspoons of dried thyme.
  • Ground Cinnamon: 1/2 teaspoon of ground cinnamon.

  • Balsamic Glaze: You can use store-bought balsamic glaze or make your own by reducing balsamic vinegar with a bit of sugar until it thickens.
  • Optional Garnish: You can garnish the roasted tomatoes with fresh basil leaves chopped parsley, or crumbled feta cheese for added flavor and presentation.

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Tomatoes: Wash the cherry or grape tomatoes and pat them dry. If they are larger, you can cut them in half. Place the tomatoes in a mixing bowl.
  • Season the Tomatoes: Drizzle the olive oil over the tomatoes. Sprinkle the fresh thyme leaves or dried thyme, ground cinnamon, salt, and pepper over the tomatoes. Toss everything together gently to coat the tomatoes evenly with the seasoning and oil.
  • Arrange on a Baking Sheet: Transfer the seasoned tomatoes to a baking sheet lined with parchment paper or a lightly greased oven-safe dish. Make sure the tomatoes are in a single layer, not overcrowded, to ensure even roasting.
  • Roast the Tomatoes: Place the baking sheet or dish in the preheated oven. Roast the tomatoes for about 20-25 minutes or until they start to soften and their skins blister. The exact cooking time may vary depending on the size and ripeness of your tomatoes.
  • Drizzle with Balsamic Glaze: Remove the roasted tomatoes from the oven. Drizzle balsamic glaze generously over the tomatoes. You can adjust the amount of glaze according to your taste preferences.
  • Garnish: If desired, garnish the dish with fresh basil leaves, chopped parsley, or crumbled feta cheese. These garnishes will enhance the flavor and presentation of the dish.
