SALMON WITH CAPER AND THYME

Ingredients
  

  • 1 pound salmon
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 1/2 teaspoon dried thyme
  • 1 lemon thinly sliced (will need 4-5 slices)
  • 1 tablespoons capers drained

Instructions
 

  • Preheat oven to 400° F. Prepare a baking sheet or baking pan lined with parchment paper (for easy cleaning).
  • Drizzle a little extra-virgin olive oil on the parchment paper then place the salmon skin side down.
  • Drizzle a little extra-virgin olive oil on the salmon then season with salt, pepper and most of the thyme.
  • Top with lemon slices and a little extra dried thyme.
  • Bake for 25 minutes.
  • When ready to serve, add capers over the fish.
