SALMON WITH CAPER AND THYME

- 1 pound salmon
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- 1 1/2 teaspoon dried thyme
- 1 lemon thinly sliced (will need 4-5 slices)
- 1 tablespoons capers drained

Preheat oven to 400° F. Prepare a baking sheet or baking pan lined with parchment paper (for easy cleaning).
Drizzle a little extra-virgin olive oil on the parchment paper then place the salmon skin side down.
Drizzle a little extra-virgin olive oil on the salmon then season with salt, pepper and most of the thyme.
Top with lemon slices and a little extra dried thyme.
Bake for 25 minutes.
