- 1.5 lb. honey crisp or pink lady apples peeled and finely chopped (about 4 medium apples)
- ⅔ cup sugar
- ¼ cup packed light brown sugar
- ⅓ cup apple cider vinegar
- ¼ c red wine vinegar
- 1 cup raisins
- 1 /3 cup finely chopped ginger
- 2 ½ Tbsp. fresh lemon juice
- 1 tsp. paprika powder
- ¾ tsp. freshly grated nutmeg
- ¾ tsp. kosher salt
- 1 /2 tsp. ground cloves
- ¼ tsp allspice
- 1 /2 tsp. ground black pepper
- 2-3 cloves garlic minced
- 1 medium yellow onion finely chopped
- 3 sticks cinnamon
