Potato Soup With Smoked Sausage
You're about to whip up a steaming pot of potato soup with smoked sausage. This hearty, comforting recipe is just what you've been craving.

- 2 tablespoons olive oil
- 2 cups diced onion
- 1 cup diced carrots
- 2 pounds russet potatoes
- 6 cups chicken broth
- 1 pound smoked sausage
- 2 cups milk
- 2 tablespoons cornstarch
- 1 tablespoon Mediterranean Seasonings
- 1 teaspoon granulated garlic
- ½ teaspoon kosher salt
- Pinch Thyme
Add olive oil to a dutch oven or large pan and place over medium heat.
Stir in onions and carrots, cook for 10 minutes or until vegetables are softened and onions start to brown.
Pour in chicken broth and add potatoes. Bring to a boil and cook until potatoes are tender, about 20 minutes.
Add smoked sausage.
Whisk milk and cornstarch together and mix into soup.
Stir in Mediterranean seasonings, garlic and salt.
Whisk until soup has thickened about 5 minutes.
Remove from heat and serve immediately.
Let it cool and add pinch of thyme on it. It makes a good flavor
Tips for Potato Soup:
- Use russet or Yukon gold potatoes.
- Cut potatoes into small chunks and they will cook faster.
- If you don't have cornstarch to thicken the soup, remove about a cup of the cooked potatoes and mash them. Stir them back into the soup to thicken.
- If you are adding cheese, add it at the very end of cooking.
